In Klondike, you aim to collect pyramids and arrange them into cells, making as few moves as possible. In golf mode, you don't have to follow the color sequence. Just place a card on top of any other card as long as it's one rank larger or smaller. Free Cell is a blend of Klondike and simple spider solitaire. All the cards you can stack will be laid out on the table in this mode. You can always use the four free cells if you run into trouble by moving unwanted cards there.
